THROWBACK THURSDAY UP IN THIS BITCH. I was saving this recipe for my upcoming cookbook but you guys said FUCK THAT. So here is the most requested recipe, The Thug Kitchen RCB Burrito.

ROASTED CHICKPEA & BROCCOLI BURRITO
3 cups of cooked chickpeas  (2-15 ounce cans, drained)
1 large yellow onion
1 red bell pepper
1 large crown of broccoli
4 cloves of garlic
1 lime
Spice Blend:
3 tablespoons olive oil
1-2 tablespoons soy sauce, tamari, or Bragg’s Liquid Aminos (You can usually find this old school hippie shit near the vinegars or soy sauces in the healthy eating section of most big grocery stores and on the internet)
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon ground coriander or more cumin if you don’t want to go to the store
black pepper or cayenne pepper to taste
 
Heat the oven to 425 degrees. Chop up the onion, bell pepper, and broccoli so that all the pieces about the size of a chickpea. Chop up the garlic real small but save that shit until later. Place all the chopped up veggies in a large bowl with the cooked chickpeas. Pour in the oil and soy sauce, stir, and then throw all the spices in there. Mix until all the vegetables and shit are covered. 
 
Put all of that on a large rimmed baking sheet (like what you would put cookies on but with an edge) and bake for 20 minutes. Take it out of the oven, don’t fucking burn yourself, add the garlic, and bake for another 15 minutes. The broccoli will look a little burnt at this point but that is the plan so chill the fuck out and take it out of the oven. Squeeze the juice of half of the lime over the pan and stir the roasted chickpeas and veggies all around. Taste some and see if it needs more spices or anything. Now make a fucking burrito. I like mine with spinach, avocado, cilantro, and some fire roasted salsa but you do your thing.

If grandmothers around the world had a rallying cry, it would probably sound something like “You need to eat!”

Photographer Gabriele Galimberti’s grandmother said something similar to him before one of his many globetrotting work trips. To ensure he had at least one good meal, she prepared for him a dish of ravioli before he departed on one of his adventures.  

“In that occasion I said to my grandma ‘You know, Grandma, there are many other grandmas around the world and most of them are really good cooks,” Galimberti wrote via email. “I’m going to meet them and ask them to cook for me so I can show you that you don’t have to be worried for me and the food that I will eat!’ This is the way my project was born!”

The project, “Delicatessen With Love”, took Galimberti to 58 countries where he photographed grandmothers with both the ingredients and finished signature dishes.

Galimberti said many of the subjects for the project were selected serendipitously, picked while he was working on a project about couch surfing that explored the global phenomenon of staying in other people’s houses. Since Galimberti never slept in hotels while working on the project, he was able to come into contact with people who introduced him to grandmothers in the area.

Galimberti acted as photographer and stylist during each shoot with the grandmothers, taking a portrait of both the women and the food they made for him.

I just looked at your cutting diet post and I’ve got to ask a really naive question: what do you eat Monday through Saturday? To me, it just seems like meat and vegetables, which must get boring. Do you have some meal ideas/templates you could share?

Unless you can afford to eat out every meal, eating bulk-cooked meals gets boring quickly.  I’ve written before how I’ll convert a multi-course French dinner into a day of bulking meals…but that sort of cooking is really involved and time consuming.

My mealplan with pup is a little different.  He cooks a couple nights a week, and on Sundays I do bulk meals for both of us to last the remaining days.  

I usually get a few kinds of root veggies (rainbow carrots, beets, golden beets, shallots, etc) and roast them at high heat in a oregano/macadamia nut oil/salt/pepper/balsamic vinegar dressing.

Chicken and steaks are marinaded in a few different marinades for flavour variety.  Chicken breasts are roasted in the oven.  Steaks are prepared in a pan following this recipe.

I usually make adobo with the chicken thighs, or coq au vin if I have some red wine laying around.

Salmon I roast with ghee, garlic, raw soy sauce, and shiitake mushrooms.

Wilton Cake Decorating Tip Charts from Twist ‘N Swirl here. This must have taken so much time to put together. Her big chart (which was so long it reproduced fuzzy on Tumblr) has ten types of Wilton tips with corresponding numbers. I actually took cake decorating classes and was horrible at it but I could do a “basketweave” cake and no one could ever figure out how I made it (so simple).
